Fun da Middle Cupcakes

I've wanted to try the Fun da Middle cupcake mix but haven't until today.  I bought the yellow cupcake mix that has chocolate in the middle.  I really like that it only makes 12.  Of course, after I got home I realized that I didn't have any cupcake liners, so Chris was nice and went to Randall's (the nearest store) to get some.  They really were easy to mix, fill & bake.  I had a can of ivy green cupcake frosting already in the pantry to top them with.

The boys and I had cupcakes after dinner tonight.

Dinner

I don't know why I am so surprised at what/how our boys will eat.  I can spend 45 minutes working on a really nice, well-balanced meal served on a plate and they won't eat hardly anything!  I can take the same ingredients, cut it all up and put it in a bowl and they think it is the BEST FOOD EVER!  It doesn't even have to be a 'normal' combination, as long as it is in a bowl.  A few days ago, we had diced ham with chopped leftover hot dogs (warmed up in the skillet), layered with green beans & corn, topped with Macaroni-n-Cheese.  They both thought it was the best!  I can serve the same items separately on a plate and it won't get the same reaction.  I am beginning to think that it is NOT my cooking but the container it is served in. 

Sigh.

Celebrating with Cake

Monday my dad asked me if I could make a simple cake for him to use to celebrate a ham radio buddy's US Citizenship (the guy became a citizen on Tuesday) and Dad needed it Wednesday morning.  I decided to make a cake for the boys to celebrate the arrival of their citizenship certificates (and I needed the decorating practice).  The boys hadn't had cake and frosting before (as far as we know), so we were excited about what their reaction would be.  Chris didn't have to work Wednesday night, so we had a family dinner and brought out the cake afterwards.  You should have seen their eyes light up!  Of course, they both got just little slivers (it was close to bedtime after all), but they loved it!  


This was my practice cake, the other one looked much nicer!
